My friend Chris recently shared, on Facebook, a Hawaiian chicken recipe he came across. It looked good, so I decided to make it. I added sliced pinapples to the marinade and also grilled them.
It took me a while to come up with a side dish since I wanted to keep with the Hawaiian theme. I ended up using the bag of honey roasted macadamia nuts my Mom brought back from Hawaii a few weeks ago. I really liked the crunch the nuts added to the rice!
It was a great meal! My 8-year old son, Alex, liked it too! 👍🏻
- Hawaiian Style Teriyaki Chicken + sliced pineapples
- Steamed Jasmine rice + chopped, honey roasted macadamia nuts + 2 Tbsp unsalted butter
The second time I made the rice, I soaked the nuts in water first to dilute the sweetness a little.
